Quick and Healthy Dinner!

This easy dinner is gluten and dairy free as well as vegetarian, and best of all its full of protein, fibre, vitamins and minerals! Here’s all it takes:
-1 small sweet potato, peeled and diced
-1/4 cup cooked quinoa
-handful of fresh spinach
-handful of cherry tomatoes
-1/4 cup of black beans, rinsed
-1/2 chopped onion

For the sauce:
-Dijon mustard
-balsamic vinaigrette

1) microwave the sweet potato for 5 minutes to soften it
2)sauté sweet potato in a frying pan until browned on medium heat
3) add all other ingredients and sauté until spinach is wilted
4) mix in dressing (or any other dressing) and enjoy!
